Immune Boosting Matcha Pie
One of the best parts of fall is baking. To keep things exciting, we love experimenting with nutritious ingredients without sacrificing taste. Today, we are sharing our Matcha pie recipe, an incredible vegan, no-bake matcha pie. Matcha is a haus favorite -- It not only gives us a calm dose of energy but it's packed with antioxidants to boost immunity. The secret to a really fluffy, decadent dessert --Coconut Yogurt, it's nutrient dense and contains probiotics!
What you’ll need:
Matcha Pie Recipe
Crust:
- 1 cup of dates
- 1 cup of walnuts
- 1-2 tbsp of water
Directions:
Combine all ingredients in a food processor or high powered blender until combined into a “dough”. Line a baking dish with parchment paper or grease with coconut oil and press date and walnut mixture firmly into pan.
Coconut Filling
- 1 cup of cashews soaked in water overnight
- 1/2 lemon juiced
- 1 tsp of vanilla
- 1/2 cup of coconut yogurt (we love Cocojune or Culina!) (1/4 for mixture, 1/4 for topping)
- 1/4 cup of coconut milk
- 1/4 cup of melted coconut oil
- 1/4 cup of maple syrup
- 1 pinch of sea salt
- 2 tsp of Matcha powder
Directions:
Blend all ingredients in a food processor or high powered blender until smooth and creamy. Add 2 tsp of matcha powder to the remaining filling and blend.
Pour filling into crust. Add a few dollops of the remaining coconut yogurt on top of the pie. Using a toothpick swirl the coconut yogurt into the matcha filling until you have your desired design. Place in the freezer for 2 hours, remove 30 mins before serving.
