Coconut Filling

  • 1 cup of cashews soaked in water overnight
  • 1/2 lemon juiced
  • 1 tsp of vanilla
  • 1/2 cup of coconut yogurt (we love Cocojune or Culina!) (1/4 for mixture, 1/4 for topping)
  • 1/4 cup of coconut milk
  • 1/4 cup of melted coconut oil
  • 1/4 cup of maple syrup
  • 1 pinch of sea salt
  • 2 tsp of Matcha powder

Directions:

Blend all ingredients in a food processor or high powered blender until smooth and creamy. Add 2 tsp of matcha powder to the remaining filling and blend.

Pour filling into crust. Add a few dollops of the remaining coconut yogurt on top of the pie. Using a toothpick swirl the coconut yogurt into the matcha filling until you have your desired design. Place in the freezer for 2 hours, remove 30 mins before serving.
